27 Passover Recipes Perfect For Keeping Kosher & Plant-Based This Year

It CAN be done!

Anyone plant-based who has ever celebrated Passover knows it can sometimes be a bit of a, shall we say, rough time. Between keeping kosher specifically for Passover and avoiding chametz (or leavened grain products), some years we can’t wait for the week to be over, much less try and get creative with our meals. So if you’re also eating a plant-based diet at the same time, we’re here to help. Following a vegetarian diet year-round, you likely already know it’s less about what you can’t eat, and more about celebrating what you can. So instead of rueing the lack of, say, pasta, celebrate all the alternatives you’ll get to try (or the freedom with which you can eat it with wild abandon the rest of the year). In the very least, we can definitely promise these 27 vegetarian Passover recipes are better than another matzo pizza (although our recipe for matzo pizza is pretty great). 😋

Speaking of pasta, it's true that many a vegetarian dinner revolves around it, bread, and potatoes. We’re beyond pleased that potatoes are still on the table for Passover (check out our spinach & artichoke baked potatoes or our house latkes if you are too!), but what to do about the rest? Try swapping in alternatives made from zucchini, cauliflower, sweet potatoes, and more. Make our zucchini lattice lasagna, our cauliflower stuffing, or our sweet potato cacio e pepe for Passover, and we bet you’ll forget all about anything missing from your meal. These same ingredients also make for killer meat substitutes—check out our cabbage Parmesan, our whole roasted cauliflower, and our vegan shepherd’s pie, then get ready to bookmark these recipes for the rest of the year too.

A note: Some of these recipes (like the aforementioned shepherd’s pie) do include kitniyot, or legumes, an ingredient some Jewish families avoid during Passover. We’ll assume if that is you, you’ll be aware of it and will sub in or out of these recipes as needed. If you (and especially your kids) do eat an entirely vegetarian diet and rely on things like legumes for protein, please talk to your rabbi about potentially including kitniyot during Passover this year.

Cozy and nourishing, we crave matzo ball soup pretty much year-round, though it's a MUST for Passover. Although schmaltz (AKA chicken fat) and chicken broth are typically included in this classic Ashkenazi Jewish soup, it’s not hard to swap in vegetarian-friendly ingredients.

Vegetable Curry

When you want something comforting, savory, and just a little spicy, you can’t go wrong with some form of curry. The robust flavor of a curry sauce acts as the perfect base for virtually any protein or vegetable. In this recipe, a variety of vegetables takes center stage alongside a creamy Thai-style curry. Just skip the (very optional) soy sauce to keep this kosher for Passover!

5

Paella Verdura

This veggie-packed paella comes together in under an hour, and, even better, most of the cooking happens in the oven. Briefly returning the skillet to the stovetop after baking is the key to achieving a crispy rice crust on the bottom, often referred to as socarrat (meaning “burnt” in Catalan).

Halal Cart-Style Cauliflower Bowl

For vegans wanting a NYC-style Halal cart experience, fear not, as these incredible flavors seamlessly translate to a plant-based version using cauliflower as the star ingredient. Spiced cauliflower joins forces with a bright and fresh tomato salad, crunchy toppings, and a homemade vegan halal cart-style sauce. Just swap in some matzo bread for the pita chips and you've got a Passover-friendly meal you'll want to make all year long.

House Latkes With Horseradish

Though latkes are commonly served with applesauce and plain sour cream, here, they get a flavor-boost with a spicy horseradish (great use for leftover seder maror) and a chive and sour cream topping, which adds savory depth to each bite.

Savory Matzo Brei

We like sour cream and chives on our savory version, but you could also go sweet (breakfast for dinner?) with applesauce, jam, or even maple syrup. To make this more dessert-y, skip the onions and add a little sugar and cinnamon. Yum!

One-Pot Harissa Beet Soup

This vegetarian soup can (and should!) be enjoyed year-round. It has a perfect balance between sweet, smoky, and spicy. The ruby red beets add sweetness and a mellow, earthy flavor. Potatoes help thicken the soup and add body without including any extra dairy or gluten, while the harissa paste adds a peppery kick. If you like things spicy, use a harissa paste labeled as such. If not, use a jar labeled “mild.”

Tzimmes

ERIK BERNSTEIN

The word tzimmes has its origins in Yiddish: To "make a big tzimmes about something" essentially means making a big fuss. Here, there's hardly any! The carrots and dates are quickly braised in an orange sauce and finished with fresh parsley for a pop of green.
